Make a journey round Turkey’s 4 coasts with Selin Kiazim as she takes over The Sea, The Sea’s chef’s desk for a four-day pop-up in June. It has been ten years since Selin held her very first pop-up at Journey Kitchen, which was simply three doorways down from The Sea, The Sea in Haggerston. Since then, she’s launched three eating places (together with the much-missed Oklava), printed two cookbooks, and gained the dessert class on Nice British menu.

For the pop-up, she is going to put together a seven-course menu utilizing The Sea, The Sea’s responsibly sourced seafood, together with Seafood Meze with Bone Marrow Poğaça; crab börek with spelled paste, delicate leeks & a tangy shellfish sauce from Antep; and dry-aged John Dory with Turkish morel pilav, egg yolk, pepper, and herring roe yogurt sauce.
